I’m always on the lookout for yummy, healthy, EASY recipes for my family and I’m willing to bet that you are too. After trying this recipe, I knew I had to share. The recipe contains many of my favorite flavors – black beans, lime, cilantro and avocado and came together quickly. I made a few minor changes to the recipe but nothing drastic so I’m just going to link right to the original recipe at a beautiful blog called Baked Bree. Whatever you do, do not skip the avocado cream – it totally makes the dish!

My changes:
- I made the black bean patties as suggested but next time I may try them with quinoa in place of the bread crumbs and I’ll probably add some shredded carrot to sneak in some more veggies.
- For the corn salsa, I couldn’t find good tomatoes at the store so I just added extra red peppers. I have a feeling this will be phenomenal with fresh summer tomatoes. Can’t wait to try it! I used red onion in place of green onions and I added cilantro because I love it.
- Again, do not skip the avocado cream! Delish.
In the spirit of honesty, I will tell you that my two {recently picky} kids did not even try it. I’m ok with that because it means I have yummy leftovers for lunch this week!
